Lemon Bars


For the base:

  • 280g all purpose flour
  • 100g Sugar
  • 230g butter (melted)
  • 2 Vanillas
  • 1/2 teaspoon salt

For the filling:

  • 2 whole lemons
  • 90g Lemon juice
  • 400g sugar
  • 6 eggs
  • 8 teaspoons cornflower
  • 90g butter (melted)
  • 1/2 teaspoon salt

For the base:

  1. Preheat the oven at 180ºC.
  2. In a saucepan melt the butter.
  3. Add in the mixer the rest of the base materials and mix them with the hook.
  4. Once the butter has melted add it in the bucket with the other materials, stir a little to blend all the ingredients. Pour the mixture into a round or square baking pan with a diameter 26cm.( Tip: place an aluminium foil in the pan before pouring the mixture so it can be removed easily once baked).
  5. Using a fork make a few tiny holes and place it in the oven for about half an hour until golden (not overcooked!). Remove and lower the oven temperature to 160ºC.

For the filling:

  1. Cut the 2 lemons in half and remove the seeds … Chop (including the peel) and put it in a blender with the sugar and the extra lemon juice. Beat the ingredients and then add the eggs, salt, the cornflower and finally the melted butter.
  2. Finally, pour the mixture over the baked base and bake until the custard thickens for about 20 minutes. Remove from the oven and let it cool. Remove from the pan, cut into square pieces and serve with icing sugar on top …
