Orange Cream

INGREDIENTS:

  • Milk – 1kg (boiled)
  • Eggs – 4 (yolks only)
  • Sugar – 200g
  • Flour – 15g
  • Rice flour – 15g
  • Oranges – 2 large (juice and zest)

METHOD:

  1. In a saucepan put the sugar, flour, rice flour, orange zest and egg yolks and beat well with wire.
  2. Pour the hot milk gradually (slowly slowly) so it gets absorbed and cook for 5 minutes over low heat.
  3. Add orange juice and stir well until the mixture gets thick.
  4. Once ready fill the serving bowls or glasses (about 6 servings) and let cool before serving.
