Chocolate Cream

INGREDIENTS:

  • Milk – 1 kg hot
  • Sugar – 200 g
  • Cocoa – 40g
  • Eggs – 4 (yolks only)
  • Rice flour – 40g
  • Vanilla – 1
  • Whipping cream – for garnish

METHOD:

  1. In a saucepan put the sugar, cocoa, flour, egg yolks, vanilla and mix well.
  2. Add the hot milk to absorb it all and boil for 5 minutes, until thickened.
  3. Fill serving bowls or glasses and allow to cool (about 6 servings).
  4. Before serving decorate with whipped cream (or sprinkle with little grated coconut or walnut).
