Lemon Berry Smoothie

INGREDIENTS:

Serves 2

  • 4 scoops vanilla ice cream
  • lemon zest (to taste)
  • about 10 fresh strawberries, or berries of your choice
  • cream or milk
METHOD:
  1. Blend together the ice cream and the berries.
  2. Adjust the consistency by adding cream or milk.

INGREDIENTS:

Serves 2

  • 3 small bananas
  • ½ cup milk
  • 1-2 handfuls of spinach
  • 1 cup frozen berries (blueberries, blackberries, etc.)
  • ½ cup bran cereal such as All Bran original
  • 1-2 tablespoons sweetener (sugar, honey, Truvia, agave, etc.)
  • ice cubes (optional)

METHOD:

  1. Blend bananas and milk until smooth. Add spinach and blend on a high setting until most of the spinach has been broken down into small pieces. Add the frozen berries and blend until the smoothie mixture is all one color.
  2. Add the bran and sweetener; blend until desired consistency. Add ice cubes and blend again until smooth (optional).

INGREDIENTS:

Serves 2

  • 2 cups + of spinach
  • 2 bananas
  • 1 cup cottage cheese
  • ⅓ cup milk
  • 2 tbs. flaxseed meal

METHOD:

  1. Place all ingredients in the blender in order given (so spinach is at the bottom). Blend until smooth. (Maybe it’s just my blender, but I can never get it to be completely homogenous. Usually I have lots of green flecks in it from the spinach, and you can see the flax a little bit.)
  2. Add ice cubes (optional) and blend until no ice chunks remain.

Kale Apple Banana Smoothie

INGREDIENTS:

Serves: 1 large smoothie or 2 medium ones
  • 1 cup greek yogurt (plain or vanilla)
  • ½ tablespoon honey
  • ¾ cup milk
  • 2 tablespoons chia seeds
  • 1 tablespoon peanut butter
  • 1 heaping cup kale, chopped
  • 1 banana, chopped
  • 1 medium apple, ¼” dice
  • ¼ teaspoon ground cinnamon
  • 2 tablespoons granola (optional)

METHOD:

  1. Place every ingredient, except for granola, into a high speed splender and blend until smooth, using a spatula to scrape the sides as you go.
  2. Pour into one large glass or two glasses and garnish with granola if using. Drink immediately.

INGREDIENTS

  • 2 cups frozen mixed berries
  • 1 cup pomegranate juice
  • 1 medium banana
  • 1/2 cup nonfat cottage cheese
  • 1/2 cup water

PREPARATION

  1. Combine mixed berries, pomegranate juice, banana, cottage cheese and water in a blender; blend until smooth. Serve immediately.
